A Mediterranean cuisine
with Provencal flavors
Arriving in the early hours of the establishment, chef Julian Cazalas offers a quality Provençal and Mediterranean cuisine for many years with his team. “We must constantly evolve and challenge ourselves in the kitchen to aim for excellence,” he explains. Indeed, the menu changes every three months. What doesn’t change ? The egg yolk in ravioli, of course ! It is always on the menu, but it is cooked differently depending on the season and the mood. The artichoke in salad and the zucchini flowers in fritters are also “best” of the house.
Timeless dishes and also some surprises…
The snacked octopus with sunny vegetables, or the rack of lamb in a crust of pine nuts, hazelnuts and walnut kernels are among the star dishes. Delicious cuts of Black Angus and Wagyu beef, and various pastas and risottos with lobster and truffle are also on the menu. Every evening, the chef also offers suggestions and a fish according to the arrival roasted in garlic oil with Provencal herbs. For dessert, it is the Grand Marnier soufflé and the waffle elaborated by the pastry chef Mathieu Marchand that are the most popular !
Atelier Crociani
La Môme Group has chosen to entrust the manufacture of its tableware to Gérard Crociani, ceramic craftsmen, from father to son, for three generations. Gérard Crociani has been a ceramist in Vallauris since 1994. He inherited, he says, the “know-how of his father”, Francis Crociani. “However, my work is different, my father was an artist and created only unique pieces of decoration. I took over his trade by working in series. The work is long. First there is the drawing, the choice of colors and then the firing. All these steps are magical because it is always a surprise, you never know what it will look like ! The Crociani workshop provides tableware for big names such as the Eden Roc in Cap d’Antibes, the Maya Bay in Monaco or the restaurants of the Alain Ducasse group. It manufactures all the restaurant services for the La Môme Group: presentation dishes, plates, but also decorative pieces such as jars and candles.
